It’s Friday and all I want is Pizza!

I don’t know what it is about the weekend coming that makes some people crave pizza. Maybe its childhood memories of pizza lunches at school on Fridays or Saturday nights when the whole family would gather around the television to watch a movie and eat pizza. Regardless of the reason, when it comes to the weekend, a lot of folks are craving pizza. Unfortunately, most pizzas don’t have a ton of nutritional value. Made of a white flour crust and topped with copious amounts of cheese and processed meats like sausage and pepperoni, pizza as it is traditionally prepared, is not your health’s best friend. I wanted to find a way to solve this pizza craving for many while offering a healthier version of the traditional pie.


I present to you Garbanzo Bean Crust Pizza topped with spinach, mushrooms and tomatoes! This amazing recipe from and mindovermunch on Instagram packs a nutritional punch without sacrificing delicious flavor. According to The George Mateljan Foundation for the World’s Healthiest Foods, garbanzo beans provide digestive support, a unique supply of antioxidants and contribute to decreased cardiovascular risks and better regulation of blood sugar. What is perhaps most significant however, are the results they reported from a recent study wherein the participants consumed garbanzo beans: “The best single study we’ve seen in this regard has been a study that measured food satiety. ‘Food satiety’ is the scientific term used to describe our satisfaction with food—how full it leaves us feeling, and how effective it is in eliminating our sense of hunger and appetite. Participants in a recent study were found to consume fewer snacks and fewer overall calories when supplementing their regular diet with garbanzo beans. They were also found to report greater food satiety, with experiences of reduced appetite and greater food satisfaction.” What could be better? A food that actually prevents you from eating more calories overall, rather than leaving you craving more. Fantastic! Without further ado, here’s the recipe for Garbanzo Bean Crust Pizza.

Ingredients for One Personal Pizza

1/4 tsp Salt
2/3 cup Bob’s Red Mill Garbanzo Bean Flour
1/4 tsp Thyme
1/4 cup Spinach
1/2 cup (8 fl oz) Water
1 slice (1 oz) Mozzarella Cheese
1-2 Tbsps Classico Bruschetta Basil & Tomato
1/4 tsp Rosemary
1 Tbsp Parmesan Cheese (Shredded)
1/4 cup sliced Mushrooms
1 Roma Tomato

For the Crust…

Combine the garbanzo bean flour, water, rosemary, thyme and salt in a bowl with a whisk. Allow the mixture to sit at room temperature for 30-45 minutes. Heat a large skillet over medium heat. Spray the skillet liberally with cooking spray and pour the crust batter into the skillet, using the back of a spoon (if necessary) to spread and cover entire pan. Cook for 2-3 minutes on each side, until lightly browned. Remove from heat and preheat broiler. Dress crust with sauce and toppings and place the skillet under the broiler for 3-5 minutes, until the cheese is melted and toppings are tender. Cut into slices and enjoy!
